My Low-Carb Vacation

Hi everybody! I'm back! My sweet little mini vacation is over. :-(
I had a wooooonderful time! My Man was thoroughly surprised and it all went as planned.
We stayed at this gorgeous Inn in Sugar Hill, NH. We stayed in the "Dream Cottage" that was just that. (check out the link at the bottom for pictures of the suite)

I ate well enough. Certainly not "on point" for my carbs, or exercise... but I didn't go overboard, and I still managed to lose 1.3lbs!

So now, I need to show you some of the food I ate this weekend.. because I have to say.. (as they say on Top Chef) this trip gave me a culinary boner!

Ok, picture time! (get comfy!)


These are jumbo scallops, seared to perfection! Who knows what that basil, pine nutty, garlicy mess on top is.. but it was heaven.

This is a caesar salad. It is in a parmesan bowl, sitting atop an anchovy butter mousse. Gorgeous!

This, is an award winning dish! A surf & turf of watermelon BBQ beef, and some amazing fish I'd never heard of in a miso marinade. Sitting atop whipped potatoes (I didn't eat those), and broccolini.

I only had 1 bite of each dessert, but this is one that could be recreated low carb! This was a panicotta with berries. So clean, crisp and not too sweet. The other dessert was a vanilla poached rhubard, with ginger iced cream and a sweet ginger cake. Joel enjoyed eating both desserts :-)


This meal was from a cute sandwich shop/bakery in the next town over. The salad is a Greek Caesar. and a cup of fruit. We ate outside over the river.

And, something very dear to my heart.. DINER FOOD :-) This was a very fabulous steak and eggs (which I had for lunch) Low carb goodness in all it's glory!
