I haven't gone grocery shopping yet, so last night was a mish-mash effort to make dinner. It actually worked out quite well! I hammered down some chicken breasts (which, was oddly satisfying), and stuffed them with pepperoni, cheddar cheese, and horseradish sauce. Covered it in black and red pepper spices and baked it in a casserole dish.
It came out pretty good! I was very sparing with the fillings, since I needed to still keep the calories in check. And so naturally, it would have been more delicious with a heap of melty cheese. But all the flavors were present, and it was nice and moist.
I also happened to have some fingerling potatoes. So I chopped some up with sweet onion, olive oil, and spices and cooked them in aluminum foil for a bit.
These little guys never disappoint!
For me, I added a side of asparagus.
My plate :
40 minutes total to make. And tasty as heck!

You need to use your salad plates for dinner ... so your food doesn't look so lonely ;-)
that dinner looks amazing. i LOVE stuffed chicken, as you could prob guess since i eat it all the time. i think i will turn into a stuffed chicken soon!
That chicken looks really good! I need to start experimenting with stuffed chicken b/c when I see other people's they always look so good!
