Zupa

Trainer Bob was telling me about some delicious soup he made. He was kind enough to write down the recipe, and I decided to make some for dinner tonight. Looking over the list, I was sure I had all the ingredients already waiting for me at home. I started prepping everything, and then I realized I had no chicken stock.
I've never made my own stock before, and certainly not for a 30 minute soup. But hey, everything was out, I should at least try!

I figured that if I could make a little bit of chicken stock from the chicken, and a little bit of veggie broth from the veggies... that their powers combined... :-)

So, I took 2 raw chicken breasts (skinless, boneless) and plopped them, into a dish. I poured a little olive oil on top, then covered them in water, added a sploosh of seasonings and a few cloves of garlic.

I put it in the oven for about 35 minutes. As the chicken cooked... broth was created!
A cool side effect of cooking this way, is that it looks as though any extra fat from the chicken was released. When I took the cover off, there was a layer of congealy fat floating on the top. Awesome ;-)

While the chicken was cooking, I put on some veggies to cook.

Carrots, celery, onion, garlic, mushrooms, sunchokes (more on those at a later date) & spices

To make a broth, I added a can of diced tomatoes (and all its juicy juice) and a couple cups of water.

Once the chicken was done, I shredded it up.

And tossed it right into my veggie pot.

I let the chicken & veggies make friends for just a few minutes. And then... I ATE IT.

And the verdict is... Bob is NOT a liar. This soup was so easy, so quick, and sooo delicious.
It really warmed me up.
The second best part? That whole bowl I had was just 95 calories. Mm hmm.

I keep a small jar of chicken bouillon in the house in case I need stock and don't have a carton! Handy!
