I love when the simplest things end up being the most delicious, and totally hitting the spot!
After getting home from the gym last night, I wanted a light dinner but I definitely wanted something warm (vs a Chobani & fruit, like I had planned on)
I made Joel spaghetti and meatballs and then, made myself Eggs in a Nest!
I don't know if this is a regional thing or not, my Mom had always made them, and they've always been my all-time favorite way to eat eggs!
For those not in-the-know, it's just a piece of bread.. you cut out the center, using a cookie cutter, or a drinking glass. Or just a knife. Toast it in the pan, crack an egg into the center, and cook it!
I always drizzle some tabasco on top. And MMM heaven!
The best part? the little dippers! The toasted centers are so good for yolk dipping!
And then came... DESSERT.

I am really thankful that I can truly enjoy very simple things. Joel looks at that fruit plate and can't fathom how to enjoy it without a slice of cake and a heap of ice cream on it.
I L-O-V-E fruit. I love veggies! I love just.. an egg! Don't get me wrong, I love almost all foods. So an amazing complicated recipe is delicious to me... but I also get so much enjoyment out of munching on cold, fresh celery. And I am thankful for that! Makes eating healthy much easier.
Have you ever had Eggs in a Nest? And, what do you call it? I've heard Eggs in a Basket, as well!

yum that is one of my favorite ways to eat eggs! we call it eggy in the basket~ like on V for vendetta!
