It doesn't take long to make life easier!

While waiting for my laundry to do it's thang, I figured I'd use my time wisely and prep some food for the upcoming week. I had bought all kinds of meats and veggies and hadn't had the time to cook them yet, so I turned on the oven and figured I'd do 'em all up at once.

First, I had some swordfish. I did a slight drizzle of lemon olive oil and a sprinkling of flavored sea salt. I got this sea salt as a gift from my friend Sue for my birthday. She knows me well! I love seafood, I love cute things, and I looove salt. This jar covers it all ;-)

The sea salt is mixed with sumac berry. It has a very distinct but very delicious flavor. So far, I've had it on chicken, fresh veggies, and now the swordfish. I have a feeling this jar will not last long :-)

Next up, I had a little package of pork. Boneless rib meat, looks like. All I did with these suckers was pour on some creole mustard, a drizzle of raw honey and some black pepper.

Then, I had some golden beets and brussels sprouts, so I plopped them on a pan together.
(I think they became friends!)

I shoved everybody in the sauna for a party, and when they came out, they were glorious!

Yes, that is a made up plate for me to mow down on. When everything came out, it smelled so good, I thought perhaps it was lunch time ;-) The swordfish was probably the best I ever made at home. I attribute this to the fact that I bought it at Whole Foods just a day ago. It tastes really fresh.

After eating my bounty, I threw everything in it's own little tupper.  And so now I've got some ready to eat foods in the fridge!

After all that (which only took 40 minutes, including prep & cook time!, btw)
I went upstairs to my craft cave and made Joel a little card (just for being cute)

And so now I am off to swap my laundry again!

so do you cook with olive oil? Tossing your veggies in olive oil and salt and pepper is a great way to cook but im not sure if its healthy if your trying to lose weight. Im a cater that weights 250 pounds. Just joined weight watchers and really hoping to do somthing about my weight and lifestyle.

Olive oil absolutely is acceptable when trying to lose weight. The key, of course, is to use a proper portion. And I am a freak about measuring :-)

The salt, however, I wouldn't try to defend, it's just delicious ;-)

Rebecca - I am not making my own Xmas cards.. I fell out of the tradition of sending out cards a few years ago, and I've been just terrible about getting back to it!

I think I might make gift tags to use, though! :-)
