Everybody walk the dino-corg

Yesterday, the weather was great, so Joel and I took the pups to the town forest for a little walk. 




It was a cool combo of wide paths like this one, and windy, hilly, more hike-like footpaths.

We ended up doing about 2.5 or 3 miles, but it didn't feel like much. Z and I could have gone all day! 


But Joel and Corgi were tuckered out. 


It's great that a walk like this doesn't feel like exercise anymore.  Just a year ago, without a doubt, I'd have been covered in sweat and legs aching. (I can't say the same for chunky corgi!)

My house smells like an Indian restaurant!

It is no secret that Joel and I love Indian cuisine. However, much to Joel's chagrin, we don't go out for it that much because of my diet. I've been feeling guilty about keeping him from his spicy mistress, so I decided to cook up a little Indian dinner at home. 
Now, I have tried many a times to make some Indian dishes from scratch like tikka masala, saag paneer and the likes. They always come out OK but nothing like at the restaurant, so I gave up. 

But I spotted this jug o goodness at Costco the other day : 


Leaving Costco inspired, my Mom and I hit up a new Indian market down the street. Where I picked up some naan, paneer (cheese), homemade samosas, pickles (chutney) and kheer (rice pudding) mix. 
I just knew Joel would be excited!

naan. it came plain, I added a smear of butter, cilantro, red pepper flakes, and crushed garlic

It was all very easy, since almost everything I got was pre-made. All I had to do was cook the basmati rice (i used brown basmati), heat up the naan, paneer, sauce, and samosas.

It all came out quite delicious! Of course, it can't compare to our favorite restaurant, but I can at least watch my calories this way, and you all know how important that is to me! :-) 

I made the kheer as well, and we each had a little after dinner, but unfortunately I have no pictures. I wasn't impressed with it, but Joel said he liked it.

Tomatoes and wolves

Last night, Joel was out and about again, so I was on my own. 
I decided to make myself some bruschetta for dinner, and I must say, it was by far the best I've ever had! 
I've never made it before, but I figured it was pretty dang easy :-) 

Spelt bread with light butter, garlic, and herbs - grilled crisp in a pan.
1 tomato, about 6 leaves of fresh basil, 1 clove garlic, drizzle of olive oil, salt & pepper.
Assemble. 
Amazing. 


(and thats not the picture, the tomato was really that bright red!)

Ugh, What a morning!

Oof, I've had a miserable morning so far today!

Corgi and Z got in a fight, I broke it up, yelled at them both, and then noticed Corgi was producing rather large pool of blood. Lovely.  So I call the vet, and they can take me right away. I suit up, get in my car, pull out of the driveway, and I'm stuck.  Apparently we got about 6 inches of snow overnight.
So now, I'm stuck in the driveway, bloody Corg in car. I get out to start shoveling myself out, catch my coat on the side-view mirror and rip a giant hole in it. My new, nice coat :-(

After jamming in the hood while trying to push my car, I attempt to give up. I call my Mom and ask her to pick me up in her big ol truck. She can't get out yet either. Meanwhile, Corgi is bleeding all over my car interior. Niiice.

So I start shoveling some more. And then, a few moments later, I hear angels singing, as my plow guy pulls up and says the best 3 words any woman can hear..

"Need a hand?"

YES I DO.  Thank you, manly man.  

So he pushes me out of the driveway so I can go to the vet, and plows my driveway clean before I return :-)

Anyway... Corgi is just fine. She has a got a really big bite, it goes straight through the back of her head to her ear.  Doc said it was big enough for stitches, but because of the angle, he thinks it'll heal fine on its own.  So she's got 1 shaved down crusty black ear.  And she's VERY sad about it. :-(
But she'll be ok.

And so will I . . .

My Tookus!

Spin bike hurts my tookus!
Workout was fine, knee is still back at being a little whiny bitch, but what can ya do?
Got home, fixed up some Turkey Chop Suey (I guess? I am not sure what constitutes a chop suey, it just sounds right)

Mine was basically a butt-ton of onions & garlic


cooked in with some ground turkey, crushed tomatoes, whole wheat elbows, romano cheese, and some spices.


It wasn't AMAZING, but it was tasty, and one of those dishes that feels so warm & hearty going down.. its hard not to eat too much!  Especially considering I made enough to feed a family of 10.
Anybody want some!?

Squirts

Baby Zevon's ass exploded last night. Took me an hour to clean one tiny room this morning. And I can't get the dog poo smell out of my nose hairs.

Poor little guy though, he was SO sad, and he just wanted to cuddle but I couldn't touch him cause he was covered in turd juice.

Don't worry, I did not take any pictures this time :-) You're safe!

Who farted?

When I got home tonight, I let the pups out and it sounded like the ocean out there! I walked down to the end of my yard, and peeked over the edge (it goes down a steep ledge), the stream was flowing, like, white water rafting flowing! Crazy. Anyway, while I was walking back I took a picture of Fatty & my hard work - the garden!

(I know it looks sloppy, but trust me... it looked like the Amazon forest before!)


Here's Corg and Z snufflin' around. I like to think they are hunting for truffles.


Came inside, did my treadmillin' (thank you SOO much for my comments on that.. I am so encouraged!) Then, got a message from Joel saying he'd be home late. Bummmmmerz.

So I took the opportunity to make some egg salad, since Joel thinks it smells like fartbubbles, might as well do it while he's not home. (the eggs, I mean... not the fartbubbles)

(Thats got - 2 eggs, FF mayo, mustard, white onion, hot pepper flakes, parsley, black pepper)
It was yummy.

After my dinner, I put on Joel's dinner (spaghetti & meatyballs) and I prepped my meals for tomorrow. One of which included this unbelievable homemade jam I got at the fruit market a few weeks ago.

I spread a tiny bit on a sandwich thin, like so -


Then, I watched ANTM like any good, hot-blooded girl. Did some other chores, took a shower, and here I am in bed, writing to you! :-)
